Three-Cheese White Pizza with Spinach

White Pizza is my favorite kind of pizza and I’m always in search for a good recipe that has the right balance of garlic and cheese. There’s an Italian restaurant near my parents house that has my all time favorite white pizza, but I’m sure I wouldn’t want to know the nutrition for it. This recipe was adapted from a recipe from Cooking Light Magazine and it’s delicious! Try it today, don’t wait! Don’t let it stop you if you don’t want to make pizza dough. You can substitute a store bought dough or even a pre-made crust.

Three-Cheese White Pizza with Spinach

Ingredients
  • Pizza Dough
  • ½ tablespoon olive oil
  • 4 garlic cloves, thinly sliced
  • 10 oz fresh baby spinach
  • 1 cup low fat ricotta cheese
  • 2 ounces shredded part-skim mozzarella cheese (about ½ cup)
  • 2 ounces pecorino Romano cheese, grated (about ½ cup)
  • 3 tablespoons 2% reduced-fat milk
  • 1 garlic clove, minced
  • 1 tablespoon cornmeal
  • Salt & pepper to taste
Instructions
  1. Remove the dough from refrigerator. Let stand at room temperature, covered, for 30 minutes.
  2. Combine ½ tablespoons olive oil and sliced garlic in a large skillet. Heat over medium-high heat 1½ minutes or until the garlic begins to sizzle. Add spinach, season with salt & pepper; sauté 2 minutes or until spinach wilts. Set aside.
  3. Combine cheeses, milk, and minced garlic in a bowl, season with salt & pepper
  4. Roll dough onto a lightly floured surface.
  5. Sprinkle cornmeal over pizza stone; place dough on pizza stone.
  6. Spread cheese mixture over dough, leaving a ½-inch border. Top with spinach.
  7. Bake at 500° for 10-12 minutes or until crust is golden and cheese is lightly browned.

7 Weight Watchers Smart Points per slice (Note: The nutrition for the recipe will vary based on the type of pizza crust used. I used the previously posted whole wheat pizza dough recipe, but it was made as a thinner crust pizza)

Combine 1/2 tablespoons olive oil and sliced garlic in a large skillet. Heat over medium-high heat 1 1/2 minutes or until the garlic begins to sizzle.

Add spinach, season with salt & pepper; sauté 2 minutes or until spinach wilts. Set aside.
