Sweet Orange Salmon with Italian Green Benas

There’s nothing easier or quicker than broiling salmon in the oven. We do this fairly frequently with different salmon toppings. I served the salmon with Italian Green Beans. Stay tuned for the green bean recipe tomorrow!

Ingredients
  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder
  • ½ teaspoon grated orange rind
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon ground coriander
  • ⅛ teaspoon black pepper
  • 4 (6-ounce) salmon fillets
Instructions
  1. Preheat broiler.
  2. Combine first 8 ingredients in a small bowl. Rub spice mixture over both sides of salmon fillets. Place salmon on a broiler pan coated with cooking spray. Broil for 8 minutes or until salmon flakes easily when tested with a fork.
