School Lunch Idea #22

The boys asked for macaroni and cheese in their lunch this week, so I decided to get a little bit sneaky. These are macaroni and cheese muffins with pureed vegetables in the sauce (sssshhhh!!). Here’s a link to the recipe. They loved it and didn’t know they were getting some extra veggies. I used a bag of frozen broccoli, cauliflower, carrots, and red peppers for the puree.

Macaroni and cheese muffins, strawberries, cantaloupe, edamame/carrots, and laffy taffy.

    too cute! Mine love to “pop” the edamame after its steamed I haven’t tried just giving it to them like this – is is freeze dried edamame?

      This is frozen shelled edamame. I put it in the lunch box frozen and it thaws by the time they have lunch. Although 2 of my kids like to eat frozen vegetables still frozen, so weird!

    Do the boys eat these cold? I think my kids would like them hot, but not cold.

      They do eat them cold, but my kids are strange and like cold food. I tasted them straight out of the fridge and they’re still good. I do prefer hot food myself!
