Roasted Cauliflower Frittata

This recipe could really be used for any meal, but I usually make it as a dinner. The smoked paprika and smoked Gruyere cheese are what really make this recipe special. Plus, roasting the cauliflower first brings out the nuttiness of the cauliflower. My kids almost always eat cauliflower, so it’s a fuss free meal for us.

Roasted Cauliflower Frittata

Ingredients
  • 1 tablespoon olive oil
  • 1 head cauliflower, cut into small florets (I like to get the biggest head I can find)
  • ½ teaspoon smoked paprika
  • Kosher salt and black pepper
  • 6 large eggs, beaten
  • 1½ cups 2% milk
  • 4 ounces smoked Gruyère, grated (1 cup) (or the cheese of your choice)
Instructions
  1. Preheat oven to 425° F.
  2. Spray a 9" x 13" baking dish with non-stick cooking spray.
  3. Combine the cauliflower with the paprika, oil, ½ teaspoon salt, and ¼ teaspoon pepper on a baking sheet.
  4. Roast, tossing once, until browned and just tender, 15 to 18 minutes. Let cool for 5 minutes. Spread evenly in the baking dish.
  5. Whisk the eggs, milk, cheese, and ½ teaspoon each salt and pepper in a medium bowl.
  6. Pour over the cauliflower.
  7. Bake until the top is golden brown and the eggs are set in the center, 25 to 30 minutes.
  8. Let cool for 5 minutes before cutting.
