Pronto Prosciutto Pasta

This pasta dish is a go-to meal for us when we don’t have much time. It’s fast and flavorful and the kids really like it. It has a nice saltiness to it with the prosciutto, olives, and feta. I used a pasta shape mix this time, but you can use whatever shape pasta you prefer. I probably use a different shape each time. I served this with an easy green bean recipe that I will post tomorrow, so stay tuned!

Ingredients
  • 8 ounces uncooked spaghetti
  • 4 teaspoons minced garlic
  • 3 Tbs olive oil
  • 2 oz chopped prosciutto
  • 2 tablespoon chopped ripe olives
  • 2 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon pepper
  • ¼ teaspoon salt
  • ½ cup crumbled fat free feta cheese
Instructions
  1. Cook spaghetti according to package directions.
  2. Meanwhile, in a large skillet, saute garlic in oil until tender.
  3. Stir in the prosciutto, olives, onion powder, basil, parsley, pepper and salt.
  4. Cook, uncovered, over medium heat for 3-4 minutes or until heated through.
  5. Drain spaghetti; toss with prosciutto mixture.
  6. Sprinkle with feta cheese.
