Pizza Baked Pasta

Looking for a family friendly meal that your whole family will love? Here it is, lightened up a bit. Most kids, and adults for that matter, like pizza flavors – cheese, sausage, pepperoni, more cheese, but it’s usually pretty high in the calorie and fat department. Here’s a few ways that I make cuts in recipes like this one – 1. Cut the amount of cheese (it can have less cheese and still taste yummy) 2. Substitute turkey products for pork products (I always sub turkey pepperoni for regular and turkey Italian sausage for regular pork sausage).

Funny story that goes along with this recipe. You will see in the pictures below that I had some helpers making this recipe with me. The other day, Scott had the tv show Chopped on while he was lifting weights. My oldest watched it with him and this prompted the kids to play “cooking” the rest of the afternoon. At dinner that evening, my oldest started critiquing the meal, just like the judges from Chopped. He also announced that he was going to start making dinner every night by himself. Well ok, go for it buddy! I had this meal planned for the next evening, so he had his shot. The kids were all excited to help at first, but at some point they lost interest and disappeared. Baby steps…..

Pizza Baked Pasta

Ingredients
  • 12 oz pasta, uncooked (whatever shape you desire)
  • ½ lb bulk Italian turkey sausage
  • 1 jar (28 oz) pasta sauce
  • 4 oz sliced turkey pepperoni, quartered
  • 1 cup part-skim ricotta cheese
  • ⅓ cup shredded Parmesan cheese
  • 2 eggs, beaten
  • 1 cup or 4 oz shredded part-skim mozzarella cheese
Instructions
  1. Preheat oven to 350°F and spray a 13x9 baking dish with nonstick cooking spray.
  2. Cook pasta with a generous amount of salt in the water. (Use the cooking time for al dente pasta since the pasta will cook more in the oven)
  3. In a large skillet, cook turkey sausage until no longer pink.
  4. Add pepperoni, pasta sauce, and cooked pasta to skillet and mix well.
  5. In a medium bowl, mix eggs, Parmesan cheese, and ricotta cheese.
  6. Spread half of the pasta mixture evenly in the baking dish.
  7. Cover with the ricotta mixture and half of the mozzarella cheese.
  8. Cover with the remaining pasta mixture.
  9. Top with the remaining mozzarella cheese.
  10. Bake uncovered for 30 minutes or until bubbly.

Preheat oven to 350°F and spray a 13×9 baking dish with nonstick cooking spray.

Cook pasta with a generous amount of salt in the water. (Use the cooking time for al dente pasta since the pasta will cook more in the oven)

In a large skillet, cook turkey sausage until no longer pink. Jackson helped with this. He learned how to turn the gas range on and adjust the temperature.


Add pepperoni, pasta sauce, and cooked pasta to skillet and mix well. He also help cut the pepperoni. This was his first time using a real knife (he usually uses kids knives) so he was excited.


In a medium bowl, mix eggs, Parmesan cheese, and ricotta cheese. I had some helpers for this step too and then they were done….


Spread half of the pasta mixture evenly in the baking dish.


Cover with the ricotta mixture and half of the mozzarella cheese.


Cover with the remaining pasta mixture.


Top with the remaining mozzarella cheese. I had a ball of fresh mozzarella that needed to be used, but I usually use shredded for this recipe.


Bake uncovered for 30 minutes or until bubbly.
