Go-To Dinner Ideas when you don’t feel like cooking

I wanted to do a post to get the ideas flowing. We all have nights, maybe more often than not, when you don’t feel like or don’t have time to cook but you don’t want to eat out. This week has been like that for me with evening commitments most nights.

Here are a couple of meals at our house when we’re short on time and energy:

Spaghetti – I make a big batch of sauce and freeze it in portions that serve our family for one meal. Then all I have to do is heat up the sauce in the microwave and boil pasta!

Bean Burrito Bar – I heat up a couple of cans of refried beans on the stove and then set out a bunch of toppings for everyone to make their own burrito. We like flour tortillas, shredded cheese, tomatoes, green olives, salsa, sour cream, lettuce, etc.

For vegetables when we’re short on time, we like the green giant steamers and birds eye steamed vegetables that have a sauce. Our favorites are ranch broccoli, teriyaki broccoli, tuscan broccoli, ranch cauliflower, broccoli and cheese sauce, and fiesta lime corn.
