Coconut Oil Rice Crispy Treats

My two main weaknesses when it comes to dessert are chocolate and coconut. So, when I came across this rice crispy treat recipe using coconut oil instead of butter, I had to try it. It didn’t disappoint! Still the classic rice crispy treat flavor with a subtle coconut flavor added to it. I made these for a football tailgate, but I probably ate a majority of them myself. Shhh, don’t tell.

Coconut Oil Rice Crispy Treats

Ingredients
  • ¼ cup Coconut Oil
  • 10.5 oz bag marshmallows
  • 5 cups rice crispy cereal
Instructions
  1. Line a 9x9 square pan with foil and spray with non-stick spray. Set aside.
  2. In a large pan, combine coconut oil and marshmallows over medium heat until completely melted. This should take 4-5 minutes and make sure to stir constantly so the bottom doesn’t burn.
  3. Once mixture is smooth, add the rice krispies and mix until evenly coated.
  4. Pour into prepare pan and let cool for about an hour. Cut into squares and serve.
