Chicken Parmesan Casserole

I have a few different recipe variations for chicken parmesan and this is one I like a lot that’s not too difficult to make. To make it even easier, use panko breadcrumbs instead of making breadcrumbs and use shredded mozzarella instead of fresh. I used dried herbs for this recipe instead of fresh. In the summer time I usually have fresh herbs in the garden and use those instead.

Ingredients
  • 1 tsp olive oil
  • 1.5 lb boneless, skinless chicken breasts, sliced in half horizontally
  • 4 oz crusty bread or panko bread crumbs
  • 1 tbs butter
  • 1 Tbsp chopped fresh parsley or 1 tsp dried
  • 1 tbsp chopped fresh oregano or 1 tsp dried
  • 1 Tbsp chopped fresh basil or 1 tsp dried
  • ½ oz grated Parmesan
  • 1¼ cups marinara sauce
  • 5-oz fresh mozzarella cheese, cut into thin slices
Instructions
  1. Put a thin layer of marinara sauce in the bottom of a 9x13 baking dish.
  2. Place chicken breasts on top of the marinara sauce and season with salt and pepper.
  3. Cover the chicken with marinara sauce and sprinkle with parsley, oregano, and basil
  4. Cover with mozzarella cheese.
  5. Tear bread into chunks and pulse in a food processor to form coarse crumbs.
  6. Heat butter in the skillet over medium and add bread crumbs. Cook, stirring often, until crumbs are light golden brown and crisp.
  7. Cover the chicken evenly with bread crumbs and top with parmesan cheese.
  8. Bake at 350˚F for 25 to 30 minutes, or until cheese is melted and bubbly and bread crumbs are dark golden brown.
