Cauliflower Pizza

This cauliflower pizza recipe is simple, but tasty. The onions caramelize and bring a sweetness to the pizza. I used this whole wheat pizza dough recipe for the crust, but you could use any pre-made crust if you prefer.

Ingredients
  • 1 yellow onion, thinly sliced
  • 1 teaspoon olive oil
  • 2 cups thinly sliced cauliflower
  • ½ teaspoon chopped thyme
  • ¼ teaspoon chili flakes
  • kosher salt and black pepper
  • 10-inch round refrigerated pizza dough
  • 1 cup shredded mozzarella
  • 2 tablespoons grated parmesan
Instructions
  1. Cook yellow onion in olive oil until golden brown. Stir in cauliflower, thyme, chili flakes, and ¾ teaspoon salt and ¼ teaspoon pepper.
  2. On a rimmed baking sheet, top refrigerated pizza dough with shredded mozzarella, the cauliflower mixture, and grated parmesan. Bake at 450° F until the cheese is bubbling, 20 to 25 minutes.

5 Weight Watchers Smart Points per slice (Note: The nutrition for the recipe will vary based on the type of pizza crust used. I used the previously posted whole wheat pizza dough recipe, but it was made as a thinner crust pizza)

Cook yellow onion (I used red onion because I happened to have one) in olive oil until golden brown.

Stir in cauliflower, thyme, chili flakes, and ¾ teaspoon salt and ¼ teaspoon pepper.

On a rimmed baking sheet, top pizza dough with shredded mozzarella, the cauliflower mixture, and grated parmesan.

Bake at 450° F until the cheese is bubbling, 20 to 25 minutes.
