Butternut Hash Browns


I know this looks like a big skillet full of shredded cheese, but it’s butternut squash. I used a food processor to shred the squash. The amount needed for this recipe would take forever to grate by hand. This is a nice savory dish that is very tasty. You could serve it as a breakfast item or a side dish with dinner. This version of hash browns doesn’t make me miss potatoes at all.

Butternut Hash Browns
Serves: 4
  • 4 heaping cups shredded butternut squash
  • 1 tsp olive oil
  • 1 medium chopped onion
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ¼ tsp ground cumin
  • salt and pepper to taste
  1. Heat olive oil over medium heat in a nonstick skillet.
  2. Saute onion until soft.
  3. Add butternut squash and seasonings and cook until crisp.
