Brussels Sprouts are a favorite vegetable at our house. The kids always eat them well. The combination of the bitterness from the brussels sprouts, the sweetness from the honey, and the tanginess from the goat cheese is a great combination. My oldest isn’t a fan of goat cheese, so I pull out some of the brussels sprouts before adding the goat cheese. It’s funny, if I serve a dish with goat cheese, he can always pick out the flavor even if I don’t tell him it’s in there.

Brussels Sprouts with Goat Cheese and Honey

Ingredients
  • 1 lb Brussels sprouts, trimmed and halfed
  • ½ tbs olive oil
  • 1 oz goat cheese
  • 1 tbsp honey
  • ½ tsp salt
Instructions
  1. Toss with olive oil and salt.
  2. Roast in oven for 20-30 minutes at 400.
  3. Toss with goat cheese and honey.

The recipe was adapted from a recipe I found on the Bites of Bri blog. The original recipe called for frying the brussels sprouts, but I prefer to roast them.

 

Toss with olive oil and salt. Roast in oven for 20-30 minutes at 400.
