Brunch Sausage Casserole

This breakfast casserole is a comfort food for me. The recipe is from my grandmother, Amy White. I have adapted it to be a lighter version of her awesome recipe. My grandmother made this casserole every Sunday morning when family was visiting in this same brown glass dish. I like to think that I inherited my love of cooking from her. She was known for her cakes, cookies, pies, cinnamon buns, really anything she made. She showed her love to everyone through her cooking and I hope to do the same. This picture was taken at my wedding and is one of my favorites.

I made this casserole recently for a Boo Hoo Brunch for moms sending their little ones to kindergarten. Hopefully it provided them some comfort!

Brunch Sausage Casserole

Ingredients
  • 1 lb turkey breakfast sausage, removed from casings, cooked and drained
  • 4-6 slices bread, crust removed
  • butter flavored non-stick cooking spray
  • 4 oz shredded sharp cheddar cheese
  • 3 eggs, slightly beaten
  • ½ cup egg beaters
  • 2 cups fat free half and half
  • 1 tsp salt
  • 1 tsp dry mustard
  • 1 tsp Worcestershire sauce, if desired
  • ⅛ tsp pepper
  • few grains cayenne pepper
Instructions
  1. Spray one side of each slice of bread with non-stick cooking spray
  2. Evenly place slices in bottom of a 9x13 baking dish coated with cooking spray. Sprinkle with cooked sausage and cheese.
  3. Combine eggs, cream, salt, mustard, Worcestershire sauce, pepper, cayenne pepper together in a large bowl.
  4. Beat until well blended. Pour over mixture in pan. Chill several hours or overnight.
  5. Bake in oven at 350 for 40 to 50 minutes or until puffy and golden brown.
