Brown Sugar-Glazed Beets

Beets are another vegetable that are not loved by all. I had never had them growing up except for the times my dad would get me to try one off the salad bar at a restaurant. I didn’t like them. Fast forward many years later, now it’s one of my favorite. This is a good recipe to start with if you’re unsure about beets because the sweetness of the sauce makes them less earthy tasting. My daughter (aka my picky eater) loves this recipe. Although, we did get the kids started on beets at an early age…

Brown Sugar-Glazed Beets

Ingredients
  • 3 tablespoons brown sugar
  • 2 tablespoons orange juice
  • 1 tablespoon unsalted butter
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • 3 cups steamed cubed beets, ½- to 1-inch cubes
Instructions
  1. Combine brown sugar, orange juice, butter, salt and pepper in a large nonstick skillet.
  2. Cook over medium heat until the sugar and butter are melted and starting to bubble.
  3. Stir in beets and cook until most of the liquid has evaporated and the beets are coated with glaze, 6 to 8 minutes.
  4. Serve hot or warm. Serving ½ Cup.

Peel beets and chop into cubes.

Steam beets for approximately 15-20 minutes or until tender.

Stir in beets and cook until most of the liquid has evaporated and the beets are coated with glaze, 6 to 8 minutes. Serve hot or warm. Serving 1/2 Cup.

Also, don’t throw away those beet greens! They are excellent sauteed with olive oil, garlic, vinegar, salt and pepper. Give them a good washing first to get the dirt out.
