Breakfast Lunch and Dinner Waffle

Our kids, like I’m sure everyone’s kids, complain a lot about what we serve them for dinner. So, we try to encourage them to help plan our dinner menu. We plan our menu a week at a time. We give them cookbooks with pictures and they pick out recipes based on the pictures. This particular recipe was picked by our middle child out of one of our Top Chef (our favorite show) cookbooks a while back. Our oldest still remembers this recipe and requested it recently. We all loved it! It’s delicious and fun to eat when the runny yolk spreads out over the waffle.

Breakfast Lunch and Dinner Waffle

Ingredients
  • 4 frozen low fat whole-grain waffles
  • 1 can fat-free refried beans
  • 4 eggs
  • 4 slices Munster cheese
  • 8 slices coppa ham or proscuitto
  • Salt and pepper for seasoning
  • Maple syrup for drizzling
Instructions
  1. Heat broiler in oven.
  2. Heat refried beans on the stovetop or microwave.
  3. Crisp the ham in a non-stick skillet.
  4. In a small skillet, crack egg into skillet and fry to desired firmness.
  5. Toast the waffle to desired doneness.
  6. Spread the waffle with refried bean mixture.
  7. Drizzle with maple syrup and top with cheese.
  8. Put waffle on a baking sheet and broil until cheese melts, watching carefully so it does not burn. Remove from oven, top with ham, fried egg. Season to taste and serve immediately.
