Baked Denver Omelet

I made this recipe recently to take to a Christmas brunch. It was easy to put together and was tasty. It worked well for a busy morning where I could combine everything in one dish and stick it in the oven to cook while I got the kids ready for school. One of the older children at the brunch really liked this dish. I saw him go up for more several times. That always makes me happy to see!

Baked Denver Omelet

Ingredients
  • 1 chopped red bell pepper
  • 1 chopped green bell pepper
  • 1 chopped yellow onion
  • 1 tsp olive oil
  • 1 cup (heaping) chopped cooked ham
  • 8 large eggs
  • ⅓ cup milk, 2%
  • Salt and freshly ground black pepper
  • ½ cup shredded sharp cheddar cheese
  • Sliced avocados, for serving (optional)
  • Chopped chives and hot sauce, for serving (optional)
Instructions
  1. Preheat oven to 400 degrees. Spray a 7 by 11-inch or 9 by 9-inch baking dish with cooking spray.
  2. Heat oil in a skillet over medium-high heat. Once hot, add red and green bell peppers and onion and cook until softened, about 4 minutes. Evenly pour pepper mixture in the bottom of the baking dish.
  3. Sprinkle ham into an even layer over the peppers and onions.
  4. In a large mixing bowl whisk together eggs and milk until well blended. Season with salt and pepper and stir, then pour over mixture in baking dish.
  5. Evenly sprinkle with shredded cheese.
  6. Bake in preheated oven until puffy and set, about 22 - 25 minutes. Cut and serve warm with avocado slices and optional chives and hot sauce.
