My name is Jen. I am a wife and mother of 3 children. My husband Scott and I love to cook and try new recipes. My love of cooking and eating started after college and has continued to grow. Unfortunately, this prompted a gradual weight gain for me. So, I went to Weight Watchers and lost around 40lbs. I learned to make smarter choices and portion control was a big issue for me. It’s now 10 years later and I have maintained my weight loss! My goal for this blog is to share recipes that are healthy and yummy (there will be some occasional un-healthy ones too!).
We are attempting to raise our children to be adventurous eaters, which is why I chose the name – Just Take One Bite. This phrase is said A LOT in our house and it seems to work. I hope you enjoy the recipes that I post and much as we do!
